How does one get lucky on St. Patrick’s Day? With delicious and fun, Lucky Charms Cupcakes. These sweet cereal cupcakes were created and inspired by my childhood love for Lucky Charms. I make these cupcakes with cereal milk. YUM! You remember, right?
The delicious sweet milk is found at the bottom of your cereal bowl after eating your breakfast. But let’s face it, it has always been about the marshmallows in Lucky Charms. They have always been the stars of the show. I can remember as a kid picky through the cereal just to get to them. Now, they seem to have more in each box.
These cupcakes are light and fluffy with a hint of vanilla and sweet-tasting cereal milk. The best part of all is the fun topping. Looking for more St Patty’s fun?

Ingredients Need for Lucky Charms Cupcakes
For Cupcakes
- 3 cups Lucky Charms, cereal separated from marshmallows
- 2 cups Milk *only 3/4 of the milk is to be used in the batter
- 1 1/4 cups All-Purpose Flour
- 1 1/4 teaspoons Baking Powder
- 1/4 teaspoons salt
- 1 tablespoon Cornstarch
- 1/2 cup butter, softened
- 2 tablespoons Vegetable Oil
- 3/4 cup Granulated Sugar
- 2 Eggs, room temperature
- 2 teaspoons Vanilla Extract
Butter Cream Frosting Ingredients
- 1/2 cup Butter, softened
- 3-4 cups Powdered Icing Sugar
- 2 Tablespoons Cereal Milk*
- 1 teaspoon Vanilla Extract
- Rainbow Sprinkles, as desired
How Do You Make Cereal Milk?
Cereal milk tastes like that dense, slightly sweet, starchy, corny milk from the bottom of the cereal bowl. It is that last little bit that sweetness your morning breakfast or quick afternoon snack.
STEP ONE: You will first need to preheat your oven to 300 degrees. Spread the Lucky Charms cereal with no marshmallows included onto a lined baking sheet. This part takes some time. You can put little kids’ hands to work to help you out.
Bake cereal for 15 minutes until lightly toasted. But make sure to stir or shift the cereal around the tray at the halfway mark. Then allow the cereal to cool.
STEP TWO: Place the cooled cereal in a strainer. Filled with a small bowl will milk. Place strainer with cereal in milk. I prefer this method. Instead of placing all the milk and cereal together. This allows me to get all the little pieces of cereal out in one swoop.
Next, let soak for at least 15 minutes. Then pull the strainer with cereal out.
How to Make These St. Patrick’s Day Cupcakes
To make your cupcakes, first, you will want to increase your oven temperature to 350 degrees. Allow to pre-heat for cupcakes.
Next, line one and a half muffin trays with cupcake liners and set them aside. This recipe will make 18 cupcakes in total. Now in a small bowl, whisk together the flour, baking powder, cornstarch, and salt. Set aside.
And then in a large bowl or using a stand mixer, beat together the butter, oil, and sugar for 2 minutes until light-colored and fluffy. Beat in the eggs one at a time. Then add in vanilla extract, and 3/4 cup of the reserved cereal milk.
Then mix in the dry ingredients until just incorporated.
Scoop the cupcake batter into the prepared liners using a 1/3 cup measuring cup or your favorite cupcake scooper. Bake these cupcakes for 24-28 minutes, until an inserted toothpick comes out clean.
Allow the cupcake to cool completely before frosting.
To make vanilla cereal buttercream frosting;
Combine in a large bowl or stand mixer the butter, 3 cups of powdered sugar, 2 tablespoons of the cereal, milk, and vanilla extract. Beat for 2 minutes before adjusting the texture with additional powdered sugar, if needed.
Scoop the frosting into a piping bag fitted with a large star tip – Wilton Tip #21.
Make dollops of frosting along the edge of each cupcake to create little starbursts, then make a small swirl of frosting in the center of each cupcake. Or you can do a traditional cupcake twirl. Wilton has a great tutorial on creating a cupcake swirl.
Garnish with Lucky Charms marshmallows and sprinkles. This adds a little “luck” to the top of the cupcake. My favorite Lucky Charms marshmallows are the horseshoe and the rainbow.

- 3 cups Lucky Charms, cereal separated from marshmallows
- 2 cups Milk *only 3/4 of the milk to be used in the batter
- 1 1/4 cups All-Purpose Flour
- 1 1/4 teaspoons Baking Powder
- 1 tablespoon Cornstarch
- 1/4 teaspoons salt
- 1/2 cup butter, softened
- 2 tablespoons Vegetable Oil
- 3/4 cup Granulated Sugar

- 1/2 cup Butter, softened
- 3-4 cups Powdered Icing Sugar
- 2 Tablespoons Cereal Milk*

- Rainbow Sprinkles and Lucky Charms Cereal Marshmallows, as desired
Instructions
- To Make Cupcakes - Begin by making cereal milk. Start by preheating the oven to 300F.
- Spread the Lucky Charms cereal (no marshmallows) onto a lined baking
sheet and bake for 15 minutes, stirring halfway. Allow cereal to cool. - Place the cooled cereal and milk in a large bowl and allow to soak for 15 minutes.
- Drain and save the milk and discard the cereal.
- Preheat oven to 350F. Line one and a half muffin trays with cupcake liners and set them aside.
- In a small bowl, whisk together the flour, baking powder, cornstarch, and salt. Set aside.
- In a large bowl, beat together the butter, oil, and sugar for 2 minutes until light-colored.
- Beat in the eggs, vanilla extract, and 3/4 cup of the reserved cereal milk.
- Beat in the dry ingredients until just incorporated.
