We bake a lot at our house. And often our desire to bake is spurred on after watching any of the Food Network Challenges shows. My daughter, who is in middle school, has an addiction. She loves sugary sweets and loves making them all herself.

I found that cookies are a happy medium. Even though the kitchen mess remains the same. We concocted this recipe from one of our tried-and-true sugar cookie recipes. We pulled in brown sugar and coconut, hoping it would turn out great. And they did.

To make these cookies stand out for the judges (my husband and son), we topped them with a basic sugar drizzle. Next time, we would like to add some brightly colored sprinkles. The results came in….and within two days, my teenage son and husband polished off every single one of these cookies.

I have now decided that we have to make these when the kids are in school, so I can store some in the freezer for when guests come over.

Ingredients to make Coconut Cookies

This easy cookie recipe requires very simple ingredients! You might even have them in your kitchen right now! Scroll down for a printable version of the ingredients and instructions.

Coconut Cookie Dough

  • 1 ÂĽ cups all-purpose flour
  • ½ tsp baking soda
  • Pinch of salt
  • 1 Stick of Unsalted Butter – at room temperature
  • ½ cup granulated sugar
  • 1 egg
  • ½ cup light brown sugar
  • 1 tsp vanilla extract
  • 1 cup coconut, shredded and sweetened

Basic Sugar Drizzle (aka glaze)

  • 2 cups of powdered sugar
  • 1 teaspoon vanilla extract
  • 2-4 tablespoons of milk

Tips For Making These Cookies

These cookies are not only easy to make but very forgiving. You can over-bake them slightly and end up a crisp and chewy cookie, or bake them as-written and get a soft in the middle cookie with buttery, crisp edges. So either way, they will come out tasting amazing.

But here are a few extra tips to help you along the way as you bake:

  • If your cookies don’t come out shaped perfectly, you can easily shape them as soon as they come out of the oven. They will be warm and moldable.
  • Make sure when you are mixing the cookie batter that you mix as instructed. Light and fluffy is what we want. If you under-mix, you will get a heavy and clumpy cookie.
  • Don’t forget to scrape down the sides of your bowl while mixing.

Extra Cookie Add-Ins

  • White Chocolate Morsels
  • Chopped Nuts (Pecans are my fav)
  • 1/2 tsp of lemon extract

How to Make These Sugar Cookies – Soft & Chewy

STEP ONE: Preheat oven to 350°F. Then line a baking sheet with parchment paper and set aside.

STEP TWO: Making the cookies begins with creaming the butter and sugars (granulated & brown) together until this mixture is nice and fluffy. Then you will want to add in your egg and vanilla extract. Mix until well combined.

STEP THREE: Next, flour, baking soda, and a pinch of salt are then added. Mix until well combined. Finally, add your sweetened coconut and mix for 30 seconds more and it’s time to make our cookies!

STEP FOUR: Drop by the spoonful, 3 inches apart, on a baking sheet. You can choose to use a cookie scoop if you have one. You can even choose to roll each dollop of cookie batter into balls. We didn’t, but if you do they will come out perfectly round.

STEP FIVE: Bake for 10-12 minutes.

STEP SIX: When the cookies come out of the oven, allow them to cool for 10 minutes before removing them from the cookie sheet.

If desired, you can drizzle these with a basic glaze at this point. To make the glaze, simply mix all glaze ingredients in a separate bowl. Using a spoon, drizzle glaze over the tops of each cookie.

How To Store Your Cookies

These cookies store great! For best freshness, I like to keep them for up to 7 days in an airtight container at room temperature. But you can also freeze these in that same airtight container for up to 6 months.

I love having extra frozen desserts on hand. You never know when you may have an unexpected guest over for tea.
