It is that time of year when I start to think of summertime desserts. Don’t get me wrong, I’m still planning on posting some delicious baked good recipes every other week, but I do look forward to bringing some less caloric options to the blog in the coming months.

Especially ones that are refreshing as well as delicious. These Lemon Lavender Popsicles are a perfect example of a delicious dessert that will stave off hunger while satisfying your sweet tooth. Plus, they’re on a stick. And as we all know, everything on a stick is instantly more delicious.

Cut up fruit in a bowl? Boring. But cut up fruit on a stick, can you say Kabob? SO FUN. But we’re not talking about fruit. We’re talking about 5 simple ingredients:

  • Lemon Juice
  • Honey
  • Sugar
  • Lavender
  • Water

How Healthy is Lavender?

Studies show that lavender has many benefits: relieving stress, improving mood, supporting sleep, reducing inflammation, eliminating dandruff, and soothing stomach upset.

Before we dig into this Lemon Lavender popsicle recipe, it’s important that we’re working with a good popsicle mold! Here are our favorites for making perfect homemade pops:

If you don’t have a popsicle mold, shot glasses, yogurt containers, muffin tins, and ice cube trays, work well! You can get creative. Just a note: the mixture will naturally expand as it freezes, so be sure to leave a little space at the top of your mold when you add the mixture.

Ingredients Needed

  • 1/2 cup water
  • 1 cup lemon juice, freshly squeezed
  • 1/4 cup sugar
  • 1/2 cup honey
  • 2 cups water
  • 1 tbsp culinary lavender

How to make your Homemade Lemon Lavender Pops

First, you will want to combine 1/2 cup of water, sugar, honey, and lavender in a small saucepan. Bring all ingredients to a boil. Make sure you are stirring until the sugar dissolves. This will take roughly a minute or so to do.

Then you can remove the saucepan from the heat. Let the lavender steep and cool down for about 25 minutes.

Once slightly cooled, pour the liquid contents through a strainer to remove all lavender bits. Now you can add the remaining 2 cups of cold water to strained syrup, mix well, and pour into popsicle molds.

Insert sticks and freeze for 6-8 hours (preferably overnight). When ready to eat popsicles, place them under hot water for 10-15 seconds to help loosen the popsicle from the mold.

How to Unmold Your Popsicles

The quickest and easiest way to unmold your popsicles is by running the mold under warm water. I just hold the bottoms of the mold under running water, moving it around to evenly warm each mold. It should just take a few seconds to melt long enough to release the pop.

Storing your homemade popsicles

These homemade fruit popsicles can be stored in the freezer for up to 3 months (if they don’t get eaten right away)! Try keeping them in their original molds.

Notes

Use culinary lavender for cooking and baking.

To store wrap each in wax paper and store in a freezer bag.
You can also wrap them in food-safe plastic bags (from craft stores) and store
in ziplock bags.
