Easy One-Skillet Lasagna
I do love a traditional lasagna but honestly, it is a whole lot of work.
And this mama doesn’t have the time to create a beautifully layered meal.
Time-consuming dinners are not in my vocabulary.
Whether you’re making this on a busy weeknight or part of a lovely Sunday dinner, you will love this recipe.
It comes together quickly and you can typically add in any kind of vegetables you have lying around without anyone noticing.
Even though this recipe doesn’t call for extra veggies, with kids, I try to hide them as much as possible. Veggies I have added in that have gone unnoticed – chopped button mushrooms, chopped spinach shredded zucchini or summer squash, grated carrot, and small chopped-up broccoli florets.
My kids love broccoli, so I don’t need to initially hide this veggie from them.

Ingredients Needed to Make One-Pot Lasagna
Here is everything you need for Skillet Lasagna. Please note you will find a printable recipe card below for your convenience.
- 12 oz Italian sausage – you can purchase links and chop after cooking or purchase ground sausage and skip a step.
- Salt and pepper – season as you go.
- 24 oz pasta sauce – your favorite brand’s sauce or make your own. My favorite brand to use is Rao’s marinara sauce.
- 1 ½ cups water
- 8 oz rotini noodles
- 1 tbsp Italian seasoning
- 1 cup ricotta cheese
- 4 oz mozzarella cheese
- ¼ cup parmesan cheese
- fresh parsley – for garnish only
Ingredient Substitution Suggestion – You Substitute Cottage Cheese for the Ricotta Cheese. Some people don’t like the flavor or texture of ricotta cheese in lasagna (or this lasagna skillet). So cottage cheese is a great alternative. Simply substitute the cheese 1:1.
This recipe calls for 1 cup of ricotta replace with 1 cup of cottage cheese.
How to Make This Skillet Lasagna
This recipe makes a lot of food- at least 6 servings- so make sure to use a large cast iron skillet!
Cook the Sausage – Add the Italian sausage to a large skillet and sprinkle salt and pepper over it.
Cook over medium-high heat for 5 minutes, or until the meat is done, breaking the meat up as it cooks.
Making the Sauce & adding in the Pasta – Stir the sauce, water, noodles, and Italian seasoning into the skillet and bring to a boil.
Reduce the heat to low, and simmer for 20 minutes, stirring often. If noodles are not tender enough, cook for an additional 5 minutes.
If you are adding veggies – And them in at this point in the cooking process. Remember to choose vegetables that could potentially dissolve in the sauce as it cooks and you might surprise yourself at how many veggies you can slip into this Skillet Lasagna.
Mix Pasta, Sauce with Cheese – Add the ricotta cheese, half of the mozzarella, and parmesan cheese, and stir well to combine. Cook over medium heat for 5 minutes.
Create Your Lasagna Skillet – Stir well and top with more cheese if desired and serve hot topped with a bit of fresh parsley.
Storing leftovers from this recipe
After making this recipe in its entirety, transfer leftovers to an airtight container and in the refrigerator for up to a week.
And yes, you can absolutely freeze one pot skillet leftover.
Again, place in an airtight container for up to 3-6 months in the freezer.
