Nothing says summer like an ice cream sandwich. I mean a brownie waffle ice cream sandwich.

While I’ve long enjoyed the frozen supermarket version of ice cream sandwiches, I felt like we needed to explore a rich, ultra-chocolaty semi-homemade version. What we finally landed on is nothing short of fabulous.

And might I add super simple and inexpensive to make? You can make these easy ice cream sandwiches without ever turning on your oven. A-M-A-Z-I-N-G!

The genius here is the waffle iron! If you don’t have one, you may want to purchase one. We use ours a lot. From making homemade breakfast waffles to exploring other creative recipes (like this one). This recipe is so simple. I bet you will be having one of those moments as I did. “Now why didn’t I think of this?”

Let’s Get Started

Ingredients Needed 

  • 1 box brownie mix, prepared
  • Nonstick cooking spray
  • 2 cups vanilla ice cream, softened
  • Sprinkles (optional)

First, you start by making a batch of brownie mix. Complete directions as per your favorite box instructions.

Things to think about. If you are gluten-sensitive, try purchasing your favorite brand’s brownie mix. 

Our family LOVES Betty Crocker’s Gluten-Free Brownie Mix and it works well with this recipe. Both my husband and I have a gluten intolerance.

Then use your waffle iron to make brownie waffles. Cooking waffles for roughly 6 to 8 minutes or until the waffle maker stops steaming. 

The smell of heaven awaits you.

After you have finished making all of your brownie waffles, make sure to pull each section apart before completing the next step. 

THE FILLING! – Bring on the ice cream

Since you are ready to get going. You can now top your waffles with vanilla ice cream or any flavor of your choosing.  All it takes is a matter of a few steps. 

Please do note: that each waffle must be completely cooled prior to filling.

Each brownie waffle, small in size, will be dense. Which means they will be heavy and delicious. Expect to feel filled up with one of our family’s favorite treats. 

The only thing better than eating ice cream straight from the container is eating it smoothed between two chocolate waffle brownies.

Chocolate waffle ice cream sandwiches were created in a few easy steps and ready to eat (after patiently waiting a few hours to firm up).

Tips for Making These Ice Cream Sandwiches

  • Before freezing and after making sandwiches, you can also think about dipping the ice cream portion of the sandwich into sprinkles, crushed peanuts, chocolate chips, etc.
  • After making them wrap them in aluminum foil, and store them in the freezer. They will keep three to six months. If they make it that long.

Delicious Brownie Waffle Ice Cream Sandwiches! Smooth creamy ice cream sandwiched between two brownie waffles.

Ingredients

  • 1 box brownie mix, prepared
  • Nonstick cooking spray
  • 2 cups vanilla ice cream, softened

Instructions

  1. Preheat Belgian waffle maker.
  2. Prepare brownie mix according to package
    instructions.
  3. Spray the top and bottom plates of the waffle
    maker with nonstick cooking spray. Scoop 1/3 cup batter onto the waffle maker
    and close the lid.
  4. Cook the waffles for 6 to 8 minutes, until the
    waffle maker stops steaming.
  5. Carefully remove the waffle from the waffle maker and allow them to cool completely.
  6. Separate the waffles into four slices. Place half the slices on a large plate or baking sheet.
  7. Spread the softened ice cream over the top of each of the waffle slices. Place
    remaining waffle slices on top of the ice cream.
  8. Place the ice cream sandwiches in the freezer, and then freeze for at least 2 hours before serving.
