Most people hear Homemade Breakfast Sausage and instantly think” way too complicated” and run out to the store and purchase sausage instead. I kid you not, making your own will change the way you make breakfast.

These patties are not intimidating to make and in fact, once you make them once, you will not want to go back for your store-bought version again. With just a few spices, ground pork, and chopped bacon (yes, we need just a little bit of bacon here!), these guys are simply perfect.

They are completely freezer-friendly, giving you 100% breakfast insurance down the road in case you want to make them and save for another day. We like putting these in little breakfast burritos or on the side of our waffles. And on top a little drizzle of maple syrup.

VIOLA! A combination that speaks full volumes of deliciousness. If youโ€™ve never made your own, Iโ€™d highly recommend it!

Ingredients Needed

  • 1 1/2 lbs ground pork
  • 3-4 bacon strips, chopped
  • 1 teaspoon sage
  • 1 teaspoon thyme
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon nutmeg
  • 2 Tablespoons maple syrup – or you can substitute it with brown sugar
  • 2 Tablespoons olive oil, as needed

How to Make Breakfast Sausage Using Ground Pork

MIX – In a medium-sized bowl, use your hands to combine the ground pork and uncooked, chopped bacon. Season with sage, thyme, garlic powder, salt, pepper, and nutmeg, and combine well. Sweeten with maple syrup, as desired, or save as a topping for later.

FORM – Once everything is combined, form the sausage into patties. You can make them as big or as small as you want them to be. I like to portion out the sausage mixture in 1/4 cup portions and form them into flat 1/2″ thick patties.

Cook – Place 1 Tablespoon of olive oil in a skillet over medium heat. Cook the sausage patties, 4 at a time, in the hot oil for 3-4 minutes per side, until well browned and an inserted thermometer reaches 145F minimum.

Repeat with all patties, adding extra olive oil as needed. Serve immediately. Or store in the fridge using an airtight container for up to 7 days.

FREEZE – See our directions below. There are a few different methods and it all depends on your preference.

Types of Meat Used for Making Breakfast Sausage

While this recipe calls for pork. We have substituted on many occasions with ground turkey. If you want to use one hundred percent ground turkey, I would recommend adding in at least 1/4 cup of plain bread crumbs.

The texture of ground turkey is more like mush. Now you can also use a combination of ground turkey and ground pork. Mixing these two types of meat gives the sausage a depth of flavor and perfect texture that I don’t think you get from just one kind of ground meat.

How to freeze Homemade Breakfast Sausage

There are two methods of freezing. Each is dependent on your freezer space and/or preference. First, after you have created the recipe below.

The first method is to shape your pork sausage into patties. Place on a parchment-lined cookie sheet and freeze for one hour. Once frozen, take each pattie and place it in a freezer bag for storage.

Freezing first will prevent them from sticking together. I like this method the best because you can pull out just two patties at a time if you want. The second method is quite different.

Using our same Pork Sausage recipe shape and roll the mixture into two logs about six inches long.  Then wrap each log in plastic wrap and freeze. To use, thaw and slice into patties with a knife, then cook

  1. Those sausage patties look delicious! I usually purchase that kind of stuff premade from the grocery store, but I can attest that the best sausage patties I have ever had were made by hand. And I love that you’ve included bacon! I love bacon and that just makes those sausages even better!
