Ingredients Needed
Please note that a full list of ingredients and a printable version of this recipe is available below.
- Ground Cinnamon or Cinnamon Sticks – Adds that warm, sweet cinnamon flavor that is essential to a classic gingerbread taste. Either option works well.
- Ground Ginger – Brings the signature spicy, slightly zesty flavor that gives gingerbread its distinctive taste.
- Brown Sugar – Adds sweetness along with a rich, caramel-like flavor that pairs beautifully with the warm spices.
- Whole Cloves – Adds a bold, aromatic spice that helps round out the gingerbread flavor. A little goes a long way.
- Water – Helps dissolve the sugar and infuse all of the spices together to create a smooth, flavorful syrup.
You can use ground spices for this recipe. Whole spice or fresh is always best and if you do use them, you will have to strain them out at the end with a fine mesh strainer.
How to make DIY Coffee Syrup
STEP ONE: First, in a saucepan on medium heat, mix all ingredients together, including water.
STEP TWO: You will simmer this mixture for about 20 minutes to infuse all the spices. Don’t let it boil. You can taste as you go in case you like a little more cinnamon or brown sugar. If you are happy with its flavor, then you are done.
STEP THREE: Cool completely before storing away. Make sure you are placing it in clean dry jars or containers. Once complete, it should be the consistency of maple syrup. This recipe will make around 1 cup of syrup. If you want more, you can feel free to double the recipe.
How to Store This Coffee Syrup
Once cooled, pour the gingerbread syrup into a clean, airtight jar or container and store it in the refrigerator. It should keep for up to two weeks when properly refrigerated. Just give it a quick stir or shake before using, then add it to your favorite coffee or latte.
Although it can last for two weeks, I’ll be honest—it never seems to last that long in my refrigerator. I’m a sucker for anything gingerbread flavored!

I just came across your recipe. I made it this morning and have to say it is delicious! I also plan to make extra to jar up for gifts. Thank you for sharing this great recipe!
AWE… Thank you, Debbie!! I absolutely love it, that you came back to comment.
Can this be water bath canned? Looking to give as gifts and want to make well in advance.
I actually have never tried it. But I would think you would be able to do it. That is a great question. If you attempt to test it out, please let me know how your batch turns out
Does this need to be heated to combine well?
Hi Allison, All the ingredients can be stored in an airtight container on your shelf. So at room temp there is no issues with mixing.
Hey Jen, I’m guessing there’s a typo but just wanted to be certain before trying to make this. It doesn’t list baking soda in the ingredients but it mentions it in the instructions. You didn’t add any to yours right? Thank you for posting this! Anxious to try it out!
OH GEEZ!!! No baking soda at all. Thanks for pointing that out. I am not sure what I was thinking when I wrote up my receipt. It taste like it is a bakery product 😉
