Most people hear Homemade Breakfast Sausage and instantly think” way too complicated” and run out to the store and purchase sausage instead. I kid you not, making your own will change the way you make breakfast.
These patties are not intimidating to make, and once you make them once, you will not want to go back to your store-bought version again. With just a few spices, ground pork, and chopped bacon (yes, we need just a little bacon here!), these guys are simply perfect.
They are completely freezer-friendly, giving you 100% breakfast insurance down the road in case you want to make them and save for another day. We like putting these in little breakfast burritos or on the side of our waffles. And on top a little drizzle of maple syrup.

Can be made ahead of time. You can make this up to 3 days ahead of time. Just keep cool in the refrigerator and cover it until ready to cook.
Ingredients Needed
- Pork – If you want, you can grind your own from pork shoulder otherwise I would suggest purchasing ground pork from the store.
- Bacon strips – Goodness, bacon just turns this recipe up a notch. You don’t need much.
- Herbs – Sage and thyme are a great combination. In addition, you can also use fresh rosemary.
- Spices – I used a combination of garlic powder, and nutmeg.
- Seasoning – coarse salt and ground black pepper is all you’ll need.
- Maple syrup – I like the sweetness and depth of using maple syrup or you can substitute it with brown sugar.
How to Make Breakfast Sausage
STEP ONE: In a medium-sized bowl, use your hands to combine the ground pork and uncooked, chopped bacon. Season with sage, thyme, garlic powder, salt, pepper, and nutmeg, and combine well. Sweeten with maple syrup, as desired, or save as a topping for later.
STEP TWO: Once everything is combined, form the sausage into patties. You can make them as big or as small as you want them to be. I like to portion out the sausage mixture in 1/4 cup portions and form them into flat 1/2″ thick patties.
STEP THREE: Place 1 Tablespoon of olive oil in a skillet over medium heat. Cook the sausage patties, 4 at a time, in the hot oil for 3-4 minutes per side, until well browned and an inserted thermometer reaches 145 degrees minimum.
Repeat with all patties, adding extra olive oil as needed. Serve immediately. Store in the fridge using an airtight container for up to 7 days.
How to Freeze Homemade Breakfast Sausage
First, after you have created the recipe below. Then shape your pork sausage into patties. Place on a parchment-lined cookie sheet and freeze for one hour. Once frozen, take each patty and place it in a freezer bag for storage.
You can then take out as many are needed to cook for breakfast that day.
